Kelly Terry

Kelly Terry achieved lifetime membership after her 136 lb loss.  One of my favorite things about my job is getting to know wonderful people like Kelly.  Congratulations Kelly!  You look fabulous!

Easy Strawberry Cream Pie

Half of a 12-ounce can frozen orange-strawberry-banana juice concentrate, thawed
one 8 ounce package fat-free cream cheese
1 package (flour 1/2 cup servings) sugar-free instant pudding mix
1 1/2 cups light whipped topping
1 cup strawberries, chopped
One reduced-fat graham cracker pie crust

1.  In blender or food processor, combine juice concentrate, cream cheese, and pudding mix; process until smooth

2.  Transfer to large bowl; fold in whipped topping and strawberries.

3. Transfer to pie crust; spread evenly. Cover and refrigerate until firm, at least 2 hours.

Per serving: 203 calories, 7 g fat, 1 g fiber


4 POINTS per serving



Mock Turtles

Small twist pretzels
"Rolo's" candies

Place Rolo's on pretzels and bake at 350 for 4 minutes

Press a pecan half on top.  (I actually leave this off because I'm allergic...)
Chill or cool until set.

1 POINT EACH



Vegetable Dip

1 cup reduced fat mayo
1 cup fat free sour cream (Naturally Yours)
1 Tbsp Dill Weed
1 Tbsp Bon Apetite
1 Tbsp Chopped Chives

Mix together for a yummy dip for veggies!

Variations of Baked Oatmeal


Remember the post about the baked oatmeal bars from a few months ago? Click here to view it:  Baked Oatmeal.  One of my wonderful members, April, sent me some yummy variations for them.  Here's what April sent me:

1.  In place of milk use light silk chocolate milk and 1 small package of sugar free chocolate pudding.  I omit the cinnamon and add a teaspoon of vanilla.  Everything else stays the same.

2.  Unsweetened coconut milk and 1/4 cup chopped dates and 1 oz walnuts chopped.  These are 3 pts.  These are good, however, I like the chocolate ones better.

I also double the recipe and make 12 muffins.  I use a ice cream scoop to measure them into each muffin tin.

Taco Soup



1 lb ground beef
1 medium onion, chopped
1 (8oz) can tomato sauce
1 can whole corn
1 can red kidney beans
1 can cut tomatoes
1 package taco seasoning (schilling, mild)

Brown meat and onion;  add remaining ingredients, including the juice from the canned items.  Heat through.  Garnish with small amount of cheese, Naturally Yours fat free sour cream, and baked taco chips.



Figure out your points, depending on what you add to it, and how many servings it has.

Kris' Dream Walkers

I have attached the photos from the Breast Cancer Walk.  What a blast we had!  Thanks to all those who participated, whether I saw you or not.  (There are still a few more pictures to come, from my daughter's phone!)

Commitment, determination, perseverance... whatever you want to call it, April  had it Saturday morning.  After her car breaking down, taking TRAX, and walking from TRAX to the park, she and hubby conquered the nearly 5 mile walk.  Way to go!
